Instructions

  1. Chop the sun-dried tomatoes and shallots, mince the garlic, and grate the Parmesan cheese.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add minced garlic and chopped shallots. Stir frequently for 2-3 minutes until softened and fragrant but not browned.
  3. Add chopped sun-dried tomatoes and stir for another minute to release their flavor.
  4. Pour in 3 cups of chicken or vegetable broth and bring to a gentle boil.
  5. Stir in 1 cup orzo pasta. Reduce heat to medium-low and simmer uncovered, stirring occasionally, for 8-10 minutes until orzo is tender but still al dente. Add a splash of broth if it gets too thick.
  6. Lower the heat and stir in ¾ cup heavy cream and ½ cup grated Parmesan until the sauce is smooth and creamy. Add more broth or cream if needed to loosen the sauce.
  7. Season with salt, black pepper, and red pepper flakes to taste. Stir in chopped fresh basil if using. Simmer for 2 more minutes to meld flavors.
  8. Serve warm, garnished with extra Parmesan or basil leaves if desired.
