A quick and simple vinaigrette made with fresh lemon juice, extra virgin olive oil, and honey that brightens up any salad with a fresh, zesty flavor.

  • 3 tablespoons fresh lemon juice (about 1 lemon)
  • 1/2 cup extra virgin olive oil (120 ml)
  • 1 tablespoon raw honey (15 ml)
  • Optional: pinch of salt
  • Optional: pinch of freshly ground black pepper

Instructions

  1. Roll lemons on the counter to soften, then cut in half and juice to extract about 3 tablespoons (45 ml) of fresh lemon juice. Strain out seeds if needed.
  2. In a mixing bowl, combine the fresh lemon juice and 1 tablespoon (15 ml) of honey. Whisk gently to dissolve the honey.
  3. Slowly drizzle in 1/2 cup (120 ml) of extra virgin olive oil while whisking continuously to emulsify the dressing.
  4. Taste and adjust sweetness by adding more honey if desired. Add a pinch of salt or black pepper for extra flavor if preferred.
  5. Use immediately or transfer to a sealed jar and refrigerate. Shake or whisk before serving if separation occurs.
