  • 1 cup (200g) granulated white sugar
  • 1 large egg (room temperature)
  • Optional: pinch of sea salt for sprinkling on top

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 cup peanut butter, 1 cup sugar, and 1 large egg. Stir until fully blended and a sticky but firm dough forms.
  3. Scoop out dough balls roughly 1.5 tablespoons (about 20g each). Roll them between your palms to form smooth balls and place them on a lined baking sheet about 2 inches apart.
  4. Using a fork, gently press down on each ball in one direction, then perpendicular to create a crisscross pattern.
  5. Bake for 10 to 12 minutes until cookies look set and slightly golden at the edges but still soft in the center.
  6. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the dough once the egg is added to avoid tough cookies. Watch oven temperature closely to prevent overbaking. If peanut butter is oily, stir before measuring. For a vegan option, substitute the egg with a flax egg (1 tbsp ground flaxseed + 3 tbsp water, set for 5 minutes). Optional sprinkle of sea salt on top enhances flavor.
