A quick and simple no-bake cookie recipe using just peanut butter, oats, and honey for a soft, chewy, and satisfying homemade treat.

  • 1 cup (250 ml) natural peanut butter (creamy, minimal added sugar or oils)
  • 1 ½ cups (135 grams) old-fashioned rolled oats
  • ½ cup (120 ml) honey (raw or organic preferred)
  • Optional: pinch of salt
  • Optional: 1 teaspoon vanilla extract
  • Optional: mini chocolate chips or chopped nuts

Instructions

  1. Gather your ingredients: 1 cup natural peanut butter, 1½ cups rolled oats, and ½ cup honey.
  2. In a mixing bowl, combine peanut butter and honey. Stir until smooth and well blended, about 2-3 minutes.
  3. Slowly fold in the rolled oats until every oat is coated and the mixture is sticky and thick. Adjust oats or honey if needed for consistency.
  4. Optional: Add a pinch of salt or teaspoon of vanilla extract and mix again.
  5. Drop spoonfuls of the mixture onto a lined baking sheet and flatten gently with the back of the spoon. You should get about 12-15 cookies.
  6. Place the tray in the refrigerator for at least 30 minutes to chill and set.
  7. Once set, serve and enjoy. Store leftovers in an airtight container in the fridge.

Notes

Warm stiff peanut butter in microwave for 15-20 seconds for easier mixing. Do not skip chilling step to ensure cookies hold shape. For faster setting, freeze for 15 minutes but avoid freezing solid. Use natural peanut butter without added oils or sugars for best texture. Can substitute honey with maple syrup for vegan option.
