Instructions

  1. Crush 40 Oreos into fine crumbs using a food processor or by placing them in a zip-top bag and crushing with a rolling pin.
  2. Transfer crumbs to a large bowl and stir in 1/2 cup melted unsalted butter until fully combined. The mixture should feel like wet sand.
  3. Press this mixture evenly into the bottom of a 12-inch springform pan, creating a firm, even layer. Chill in the fridge for at least 15 minutes to set.
  4. In a large bowl, beat 32 oz softened cream cheese with 1 1/4 cups powdered sugar and 2 teaspoons vanilla extract until smooth and creamy (3-4 minutes on medium speed).
  5. In a separate chilled bowl, whip 2 cups cold heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula, being careful not to overmix.
  7. Fold in 20 roughly chopped Oreos to the filling.
  8. Pour the filling over the chilled Oreo crust and spread evenly with a spatula.
  9. Cover with plastic wrap and refrigerate for at least 4 hours or overnight for best results.
  10. Before serving, run a warm knife around the edges of the pan, release the springform, and cut into 20 pieces.
