  • ¾ cup (150g) granulated sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs, room temperature
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • 1 tsp vanilla extract
  • Optional: ½ cup chopped walnuts, chocolate chips, or a sprinkle of cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Stir in the eggs, melted butter, and vanilla extract until combined.
  4. Sprinkle the flour, sugar, baking soda, and salt over the wet mixture. Fold gently with a spatula or wooden spoon until no flour streaks remain. Do not overmix.
  5. If desired, fold in optional mix-ins like chopped walnuts or chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, starting to check at 50 minutes with a toothpick. It should come out clean or with a few moist crumbs.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Use ripe bananas for best sweetness and moisture. Do not overmix the batter to avoid tough bread. If bananas are very ripe and liquidy, reduce butter by 1 tablespoon. Avoid opening the oven door during the first 30 minutes to prevent collapse. For a glossy top, brush melted butter on the loaf after baking. Can substitute butter with coconut or neutral oil for dairy-free. Gluten-free flour can be used but expect a denser texture.
