  • 2 cups shredded rotisserie chicken (preferably dark meat)
  • 810 small corn or flour tortillas, warmed
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Juice of 1 fresh lime
  • A handful of fresh cilantro, chopped (optional)
  • Optional toppings: diced red onion, shredded lettuce or cabbage, crumbled queso fresco or shredded cheddar, sour cream or Greek yogurt, fresh avocado slices or guacamole, pickled jalapeños

Instructions

  1. Remove about 2 cups of meat from your rotisserie chicken, discarding skin or bones. Shred into bite-sized pieces using fingers or forks (about 3 minutes).
  2. In a small bowl, combine ground cumin, smoked paprika, chili powder, garlic powder, salt, and pepper to taste.
  3. Heat a non-stick skillet or cast iron pan over medium heat and add 1 tablespoon olive oil. Warm for about 30 seconds until shimmering.
  4. Add shredded chicken to the pan and sprinkle seasoning mixture evenly over it. Stir constantly to coat the chicken well. Cook for 3-4 minutes until heated through and slightly crispy on edges.
  5. Remove pan from heat and squeeze fresh lime juice over the chicken. Toss in chopped cilantro and stir gently.
  6. Warm tortillas by heating each in a skillet for 15-20 seconds per side or microwaving wrapped in a damp paper towel for 30-40 seconds.
  7. Spoon warm chicken onto each tortilla and add desired toppings such as diced onion, avocado slices, shredded lettuce, cheese, or sour cream.
  8. Serve immediately while warm and fresh.

Notes

Use dark meat for juiciness. Don’t skip fresh lime juice for brightness. Warm tortillas until soft and slightly charred for best texture. Avoid overcrowding the pan to prevent steaming the chicken. Add a splash of chicken broth if chicken feels dry. Season gradually with chili powder to adjust heat.
