Fresh Frozen Yogurt Fruit Bark Recipe with Rainbow Berries and Honey Drizzle

A quick and easy summer snack featuring creamy Greek yogurt spread thin, topped with colorful mixed berries and drizzled with honey, then frozen to create a refreshing, healthy treat.

  • 2 cups (480 ml) Greek yogurt (full-fat recommended, low-fat or dairy-free coconut yogurt optional)
  • 2 tablespoons (30 ml) honey (mild floral like clover or wildflower)
  • 1 ½ cups (225 g) mixed berries (blueberries, raspberries, sliced strawberries, blackberries; fresh preferred, frozen thawed acceptable)
  • 1 teaspoon (5 ml) vanilla extract
  • Optional: 1 tablespoon (15 g) chia seeds

Instructions

  1. Line a 9×13 inch baking sheet with parchment paper or a silicone baking mat.
  2. In a mixing bowl, combine Greek yogurt, honey, and vanilla extract. Stir gently until smooth and well blended. Mix in chia seeds if using.
  3. Pour the yogurt mixture onto the lined baking sheet and spread evenly to about 1/4 inch thickness.
  4. Distribute the mixed berries evenly over the yogurt, pressing gently so they stick but are not submerged.
  5. Place the baking sheet flat in the freezer and freeze for at least 3 hours until firm.
  6. Remove the frozen bark from the freezer and drizzle extra honey over the top.
  7. Lift the bark off the parchment and break into rustic pieces. Serve immediately or keep frozen until ready to enjoy.

Notes

Use full-fat Greek yogurt for best creamy texture. If using regular yogurt, strain overnight to thicken. Freeze for at least 3 hours for a firm bark. Drizzle honey after freezing to preserve flavor and texture. Let bark sit 5 minutes at room temperature before breaking if too hard. Frozen bark keeps up to 2 weeks in an airtight container.
