  • 2 cups (400g) granulated sugar
  • 3/4 cup (75g) unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup (240ml) Guinness stout
  • 1/2 cup (115g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1/2 cup (120ml) sour cream
  • 2 teaspoons vanilla extract
  • For the Frosting:
  • 3 cups (360g) powdered sugar
  • 1/2 cup (115g) butter, softened
  • 1/3 cup (35g) unsweetened cocoa powder
  • 3 tablespoons (45ml) Guinness stout
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and prepare a 9×13-inch pan by greasing or lining it with parchment paper.
  2. In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking soda, and salt. Whisk to combine evenly.
  3. Add the Guinness stout and melted butter to the dry ingredients and stir gently until the batter starts to come together.
  4. Mix in the eggs, sour cream, and vanilla extract using a whisk or hand mixer on medium speed until smooth and glossy, about 3-4 minutes.
  5. Pour the batter into the prepared pan and smooth the top with a spatula.
  6. Bake for 35-40 minutes, checking doneness with a toothpick inserted in the center; it should come out with a few moist crumbs.
  7. Allow the cake to cool on a rack for about 20 minutes.
  8. Prepare the frosting by beating softened butter until creamy. Gradually add powdered sugar and cocoa powder, alternating with Guinness stout and vanilla extract. Beat until fluffy and spreadable.
  9. Spread the frosting evenly over the cooled cake and let it set for at least 30 minutes before slicing.

Notes

Use room temperature eggs for better blending. Avoid overmixing to prevent a tough crumb. Use fresh cocoa powder for best flavor. Start checking cake at 35 minutes to avoid overbaking. Standard Guinness Draught is recommended. Frost cake only when completely cool. Grease and line pan with parchment paper for easy cleanup and to prevent sticking.
