  • 1 whole wheel brie cheese (about 8 ounces / 225 grams)
  • 1 sheet puff pastry (thawed if frozen)
  • 3 tablespoons fig jam
  • 1/4 cup walnuts, roughly chopped and toasted
  • 1 large egg, beaten (for egg wash)
  • Optional: pinch of fresh thyme or rosemary

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toast the walnuts in a dry skillet over medium heat for 3-5 minutes, stirring often until fragrant and golden. Watch closely to avoid burning.
  3. On a lightly floured surface, unfold the thawed puff pastry sheet. Trim edges if needed to fit the brie wheel, leaving enough to fully wrap it.
  4. Place the brie in the center of the puff pastry. Spread the fig jam evenly over the top of the brie, then sprinkle the toasted walnuts on top. Add a pinch of fresh thyme if desired.
  5. Fold the puff pastry around the brie, sealing edges by pinching or folding underneath. Lightly score the top for decoration without cutting all the way through.
  6. Brush the entire pastry surface with the beaten egg for a golden shine.
  7. Place the wrapped brie on a parchment-lined baking sheet. Bake for 20-25 minutes until the puff pastry is puffed and golden brown. Watch closely near the end to prevent burning.
  8. Let the baked brie rest for about 5 minutes after removing from the oven before serving.

Thaw puff pastry completely before use to prevent cracking. Use a thin layer of fig jam to avoid sogginess. Toast walnuts for deeper flavor and crunch. If pastry browns too quickly, tent with foil. Let baked brie rest before cutting to prevent cheese from spilling out.
