Ingredients

  • All-purpose flour โ€“ 2 ยฝ cups (315g), sifted
  • Baking powder โ€“ 2 ยฝ teaspoons

  • Unsalted butter โ€“ ยพ cup (170g), softened
  • Granulated sugar โ€“ 1 ยพ cups (350g)
  • Large eggs โ€“ 4, room temperature
  • Whole milk โ€“ 1 cup (240ml), warmed slightly
  • Pure vanilla extract โ€“ 2 teaspoons
  • Heavy whipping cream โ€“ 2 cups (480ml), chilled
  • Powdered sugar โ€“ ยฝ cup (60g), sifted
  • Cream cheese โ€“ 4 oz (115g), softened (optional)
  • Vanilla extract โ€“ 1 teaspoon
  • Dried flower crown โ€“ edible dried flowers
  • Edible gold leaf sheets โ€“ 2-3 small sheets

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a mixer bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3โ€“4 minutes.
  4. Add eggs one at a time, mixing well after each addition.
  5. Alternate adding dry flour mixture and warmed milk to the butter-egg mixture, starting and ending with flour. Mix gently on low speed until just combined.
  6. Fold in vanilla extract with a spatula.
  7. Divide batter evenly between prepared pans and bake for 25โ€“30 minutes or until a toothpick inserted comes out clean.
  8. Cool cakes in pans for 10 minutes, then transfer to cooling racks to cool completely.
  9. Chill mixing bowl and beaters. Whip heavy cream until soft peaks form.
  10. In a separate bowl, beat cream cheese with powdered sugar and vanilla extract until smooth. Fold into whipped cream gently.
  11. Place one cake layer on serving plate. Spread about ยฝ cup frosting evenly. Repeat with remaining layers and frost top and sides thinly.
  12. Decorate with dried flower crown on top and carefully apply edible gold leaf using tweezers.
  13. Chill cake in refrigerator for at least 30 minutes before serving.

Sift dry ingredients for a light crumb. Cream butter and sugar until pale and fluffy. Avoid overmixing batter to prevent toughness. Chill bowl and beaters before whipping cream.
