Refreshing Frozen Watermelon Margarita Popsicles with Tajín Chili Salt

These vibrant and zesty watermelon margarita popsicles combine fresh watermelon purée, lime juice, tequila, and a spicy Tajín chili salt rim for a refreshing summer treat that’s quick and easy to make.

  • 4 cups watermelon, cubed and seeds removed
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/2 cup tequila blanco
  • 2 tablespoons sugar (adjust based on sweetness)
  • 1/4 cup water
  • 2 tablespoons Tajín chili powder
  • 1 tablespoon coarse sea salt
  • Optional: pinch of cayenne pepper for extra heat

Instructions

  1. Cube about 4 cups of ripe, seedless watermelon.
  2. Add the watermelon cubes and 1/4 cup water to a blender and blend until smooth but slightly pulpy, about 30 seconds.
  3. Add 1/4 cup fresh lime juice and 2 tablespoons sugar to the blender and blend again until sugar dissolves, about 10 seconds. Taste and adjust sugar if needed.
  4. Add 1/2 cup tequila blanco and pulse just to combine. For non-alcoholic version, omit tequila and add extra lime juice or sparkling water.
  5. In a small shallow dish, mix 2 tablespoons Tajín chili powder with 1 tablespoon coarse sea salt.
  6. Wet the rims of popsicle molds with water or lime juice, then dip into the Tajín-salt mixture to coat evenly.
  7. Pour the watermelon mixture into the prepared molds, leaving a small gap at the top. Insert sticks and cover if molds have lids.
  8. Freeze for at least 6 hours or overnight. Remove about 5 minutes before serving to soften slightly.

Notes

If popsicles are too icy, stir the mixture halfway through freezing to redistribute ice crystals. Use ripe watermelon for best sweetness. Adjust sugar and lime juice to balance flavor. Label molds if freezing multiple flavors. Silicone molds ease removal.
