  • 1 tablespoon baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 3/4 cup buttermilk, cold (or milk plus 1 teaspoon vinegar)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/4 cup diced pimentos, drained
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 8 ounces country ham, thinly sliced
  • Optional: hot sauce or mustard for extra kick

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease a cast iron skillet.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Add the cold, cubed butter and quickly cut it into the flour mixture using a pastry cutter or two knives until it resembles coarse crumbs with small pea-sized bits of butter visible.
  4. Pour in the cold buttermilk and stir gently with a wooden spoon or spatula just until the dough comes together. Do not overmix.
  5. Turn the dough out onto a lightly floured surface. Gently pat it into a 1-inch thick rectangle. Fold it over onto itself 2-3 times to create layers, then pat again to 1-inch thickness.
  6. Using a biscuit cutter or a floured glass, cut out biscuits and place them on the prepared baking sheet. Gather scraps and repeat until all dough is used.
  7. Bake the biscuits for 12-15 minutes or until golden brown on top. Remove and let cool slightly.
  8. While biscuits bake, combine shredded cheddar, softened cream cheese, mayonnaise, diced pimentos, smoked paprika, garlic powder, salt, and pepper in a medium bowl. Mix until smooth and spreadable. Adjust seasoning if needed.
  9. Slice biscuits in half horizontally. Spread a generous layer of pimento cheese on the bottom half, then top with 2-3 slices of country ham. Add a dash of hot sauce if desired. Cap with the biscuit top.
  10. Optional: Place assembled sliders on a baking sheet and warm in a 350°F (175°C) oven for 5-7 minutes before serving.

Notes

Keep butter cold for flaky biscuits. Use freshly shredded cheese for better meltability. Do not overmix biscuit dough to avoid toughness. Folding dough creates flaky layers. Pimento cheese can be made ahead and tastes better after resting. Warm sliders gently to keep biscuits soft and cheese melty. Store leftovers wrapped in plastic or airtight container in fridge up to 3 days.
