  • 1/2 cup (50g) grated carrots
  • 1 cup (240ml) milk of choice (whole, skim, almond, oat, etc.)
  • 1/4 cup (60g) plain Greek yogurt (or dairy-free alternative)
  • 2 tablespoons (30g) cream cheese, softened
  • 2 tablespoons (30ml) maple syrup (or honey/agave)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon (12g) chia seeds (optional but recommended)
  • Pinch of salt
  • Optional add-ins: 1/4 cup chopped walnuts or pecans, 2 tablespoons raisins, 2 tablespoons shredded coconut

Instructions

  1. Peel and finely grate about 1/2 cup (50g) fresh carrots.
  2. In a medium bowl, combine 1 cup (90g) rolled oats, 1 tablespoon (12g) chia seeds (if using), 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and a pinch of salt. Stir to distribute spices evenly.
  3. Add 1 cup (240ml) milk, 1/4 cup (60g) plain Greek yogurt, 2 tablespoons (30ml) maple syrup, and 1 teaspoon vanilla extract to the dry ingredients. Stir gently to combine.
  4. Fold in the grated carrots with a spatula.
  5. In a small bowl, soften 2 tablespoons (30g) cream cheese until smooth. Optionally add 1 teaspoon maple syrup or honey for sweetness and mix well.
  6. Spoon half of the oat mixture into jars or containers. Dollop half of the cream cheese mixture on top and swirl lightly with a knife or skewer. Repeat layering with remaining oats and cream cheese.
  7. Seal jars or cover containers tightly and refrigerate for at least 6 hours or overnight.
  8. In the morning, stir gently if desired or enjoy the layered swirl as is. Optionally top with chopped walnuts, raisins, or shredded coconut.
