Crispy bacon wrapped around spicy jalapeños filled with a rich, creamy cheese mixture, grilled to perfection for a quick and crowd-pleasing appetizer.

  • 12 fresh medium-sized jalapeños
  • 10 thin slices of bacon, cut in half
  • 8 ounces (225g) full-fat softened cream cheese
  • 1 cup (100g) shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • BBQ sauce (optional, for brushing bacon)

Instructions

  1. Wash and dry the jalapeños. Slice each in half lengthwise and carefully remove the seeds and membranes using a small spoon or knife (wear gloves if sensitive to heat).
  2. In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, garlic powder, smoked paprika, salt, and pepper. Stir until smooth and creamy.
  3. Spoon the cheese mixture into each jalapeño half, filling them generously but without overstuffing.
  4. Wrap each stuffed jalapeño half with a half slice of bacon, securing with a toothpick if needed. Optionally, brush a thin layer of BBQ sauce on the bacon before cooking.
  5. Preheat grill to medium heat (about 350°F). Place bacon-wrapped jalapeños on the grill and cook for 10-15 minutes, turning occasionally until bacon is crispy and cheese is melted and bubbling.

Notes

Remove seeds and membranes to reduce heat. Use thin-cut bacon for best crisping. If using thick-cut bacon, pre-cook slightly before wrapping. Keep grill lid closed as much as possible. Avoid overcrowding jalapeños on grill or pan to ensure crisp bacon. Can bake at 400°F for 20 minutes or broil for 8-10 minutes if no grill is available.
