  • 1 cup (120g) breadcrumbs (plain or Italian-style)

  • 2 large eggs
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced

  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon kosher salt
  • ยฝ teaspoon black pepper, freshly ground
  • 1 teaspoon dried thyme
  • ยผ teaspoon cayenne pepper (optional)
  • ยฝ cup (100g) brown sugar, packed
  • ยฝ cup (120ml) ketchup (for glaze)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce (for glaze)
  • ยฝ teaspoon garlic powder

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Position the rack in the middle of the oven. Line a baking sheet with foil or parchment paper, then place your loaf pan on top.
  2. Soak the breadcrumbs. In a large mixing bowl, combine the breadcrumbs and milk. Let them sit for 5 minutes until the breadcrumbs have absorbed the milk and become soft and pasty.
  3. Sautรฉ the aromatics. In a small skillet over medium heat, add a drizzle of olive oil. Cook the diced onion for 3-4 minutes until translucent. Add the minced garlic and cook for another 30 seconds until fragrant. Let cool for a minute or two.
  4. Mix the meatloaf base. To the soaked breadcrumbs, add the eggs, ketchup, Worcestershire sauce, Dijon mustard, salt, pepper, thyme, and cayenne (if using). Stir until well combined.

  9. Bake for 45 minutes. Place the loaf pan on the prepared baking sheet and bake for 45 minutes.
  10. Apply the second layer of glaze. After 45 minutes, carefully remove the meatloaf from the oven. Brush the remaining glaze over the top. Return to the oven and bake for another 15-20 minutes.
  11. Check for doneness. The meatloaf is ready when an instant-read thermometer inserted into the center reads 160ยฐF (71ยฐC).
  12. Rest before slicing. Remove the meatloaf from the oven and let it rest in the pan for 10 minutes. After 10 minutes, carefully transfer the meatloaf to a cutting board.
  13. Slice and serve. Use a sharp knife to slice the meatloaf into ยฝ-inch (1.3 cm) thick slices. Spoon any remaining glaze from the pan over the slices. Serve warm.
