  • 1 pint cherry tomatoes, halved
  • 1/2 cup kalamata olives, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped (optional)
  • 1/4 cup crumbled feta cheese (optional)
  • Extra lemon wedges for serving

Instructions

  1. Cook the Quinoa: Rinse the quinoa in a fine-mesh strainer under cold water for about 30 seconds. In a medium saucepan, combine the rinsed quinoa, water or broth, and salt. Bring to a boil over high heat. Reduce heat to low, cover, and simmer for 15 minutes. Do not lift the lid. Turn off heat and let sit, covered, for 5 minutes. Fluff with a fork.
  2. Prepare the Chickpeas: Preheat oven to 400°F (200°C). Pat the rinsed chickpeas dry with a clean towel. In a bowl, toss chickpeas with olive oil, cumin, smoked paprika, cayenne, garlic powder, salt, and pepper. Spread in a single layer on a baking sheet. Roast for 15-20 minutes, shaking the pan halfway through, until golden and slightly crispy.
  3. Make the Dressing: In a small bowl, combine tahini, lemon juice, minced garlic, warm water, maple syrup, and salt. Whisk until smooth. Add more warm water if needed to reach a pourable consistency. Taste and adjust seasoning.
  4. Prep the Vegetables: Dice the cucumber, halve the cherry tomatoes, slice the red onion thinly (soak in cold water for 10 minutes if desired), and chop the parsley and mint.
  5. Assemble the Bowls: Divide the warm quinoa among four bowls. Top with roasted chickpeas, cucumber, tomatoes, olives, red onion, and fresh herbs. Drizzle generously with tahini dressing. Sprinkle feta cheese on top if using. Serve immediately with lemon wedges.
