  • 3 pounds Yukon Gold or red potatoes, washed and cut into bite-sized chunks
  • 1/3 cup yellow mustard
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter option)
  • 2 tablespoons fresh dill, finely chopped
  • 2 stalks celery, finely diced
  • 1/2 small red onion, minced (optional)
  • 1 tablespoon apple cider vinegar
  • Salt to taste (start with 1 teaspoon)
  • 1/2 teaspoon black pepper
  • 3 large hard-boiled eggs, peeled and chopped
  • 1 teaspoon celery seed (optional)

Instructions

  1. Place the cut Yukon Gold potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 15-18 minutes until tender but not mushy (test with a fork; it should slide in easily without the potato falling apart). Drain and let cool for about 10 minutes.
  2. In a medium bowl, whisk together the yellow mustard, mayonnaise, apple cider vinegar, salt, pepper, and celery seed (if using). Taste and adjust seasoning.
  3. While potatoes cool, finely dice the celery and red onion. Chop the fresh dill and hard-boiled eggs into bite-sized pieces.
  4. Gently fold the cooled potatoes into the dressing. Add the chopped celery, onion, dill, and eggs. Stir carefully to keep the potatoes intact but evenly coated. If the salad seems dry, add a little more mayo or a splash of vinegar.
  5. Cover and refrigerate for at least 1 hour before serving. Before serving, give it a gentle stir and taste again for salt and pepper.

Notes

Do not overcook potatoes to avoid mushy texture. Use fresh dill for best flavor. Chill salad for at least 1 hour to let flavors meld. Mix gently to keep potatoes intact. Boil eggs while potatoes cook to save time. Adjust salt in layers to balance flavor. For a lighter version, substitute half or all mayonnaise with Greek yogurt. Vegan adaptation possible by using vegan mayo and omitting eggs.
