  • ¼ cup hot water (about 175°F / 80°C)
  • 1 cup milk of choice (almond, oat, dairy, coconut, or soy milk)
  • 12 tablespoons simple syrup or honey (optional, adjust sweetness)

Instructions

  1. Make the Dragonfruit Lemonade: Combine 1 cup of dragonfruit puree, 1 cup freshly squeezed lemon juice, 3 cups cold water, and ½ cup simple syrup in a large pitcher. Stir well until combined. Strain through a fine mesh sieve if a smoother texture is desired. Chill in the refrigerator.
  2. Prepare the Matcha: Sift 1½ teaspoons of matcha powder into a small bowl. Pour ¼ cup hot water (about 175°F / 80°C) over the matcha. Whisk vigorously in a zigzag motion until fully dissolved and frothy. Let cool slightly.
  3. Mix the Matcha Milk: In a separate cup, combine 1 cup milk of choice with 1-2 tablespoons simple syrup or honey, adjusting sweetness to taste. Pour the cooled matcha into the milk and stir gently. Chill if needed.
  4. Layer the Drink: Fill a glass halfway with ice cubes. Slowly pour the dragonfruit lemonade over the ice until the glass is about two-thirds full. Carefully pour the matcha milk mixture over the back of a spoon held just above the drink’s surface to create distinct layers.
  5. Serve Immediately: Present with a straw or long spoon. Stir gently before sipping or enjoy the layers separately.
