  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda

  • 6 tablespoons cold unsalted butter, cubed
  • 1 cup cold buttermilk
  • 1 tablespoon granulated sugar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly butter or spray a 9-inch baking dish.
  2. In a medium bowl, combine spiced peach preserves, bourbon, brown sugar, cinnamon, and vanilla extract. Stir well.
  3. Mix cornstarch and water until smooth, then add to the peach mixture and stir to thicken.
  4. Pour the filling evenly into the prepared baking dish.
  5. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar (if using). Add cold cubed butter.
  6. Cut the butter into the flour mixture using a pastry cutter or two knives until coarse crumbs with pea-sized butter bits remain.
  7. Add cold buttermilk and stir gently until dough just comes together; do not overmix.
  8. Turn dough onto a lightly floured surface, knead gently 3-4 times, then pat or roll into a 1-inch thick rectangle.
  9. Cut out 8 biscuits using a round cutter or glass and place them over the peach filling, slightly touching but not packed.
  10. Bake for 20-25 minutes until biscuits are golden and puffed and filling is bubbly.
  11. Cool slightly before serving to allow filling to thicken.

Notes

Keep butter cold for flaky biscuits. Do not overmix biscuit dough to avoid toughness. Tent with foil if biscuits brown too fast. Use fresh peaches in summer by simmering with bourbon and spices.
