A warm, comforting peach crisp featuring bourbon-infused peaches and a nutty brown butter crumble topping, perfect for fall or summer gatherings.

Ingredients

Scale
  • 5 to 6 ripe peaches, peeled and sliced (about 4 cups)
  • 2 tablespoons bourbon (optional but highly recommended)
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 cup unsalted butter (1 stick), browned
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Prep the peaches by peeling and slicing into 1/2-inch wedges. Toss peaches in a large bowl with bourbon, granulated sugar, brown sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Mix gently and set aside to macerate.
  2. Melt the unsalted butter in a small saucepan over medium heat, stirring frequently until it turns golden brown and fragrant (about 4-5 minutes). Remove from heat and let cool slightly.
  3. Add rolled oats, flour, brown sugar, salt, cinnamon, and chopped nuts (if using) to the browned butter. Stir until the mixture clumps together with a coarse, crumbly texture. Add a teaspoon of melted butter or a splash of bourbon if too dry.
  4. Preheat oven to 350°F (175°C). Transfer the peach mixture evenly into a 9-inch square baking dish. Sprinkle the brown butter crumble topping evenly over the peaches.
  5. Bake for 35-40 minutes until the topping is golden brown and crisp and the peaches are bubbly and softened. If topping browns too quickly, cover loosely with foil after 25 minutes.
  6. Let the crisp cool for 10 minutes before serving to allow the filling to thicken. Serve warm with vanilla ice cream or whipped cream.

Notes

Do not walk away while browning butter to avoid burning. Let the crisp rest 10 minutes after baking to thicken the filling. For gluten-free, substitute all-purpose flour with almond flour or gluten-free blend. For dairy-free, use vegan butter or browned coconut oil. Bourbon is optional and can be replaced with apple juice or extra peach juice for non-alcoholic version.
