Ingredients

Scale
  • 1 cup fresh or frozen blueberries
  • 1 cup fresh or frozen raspberries
  • 1 cup fresh or frozen strawberries, hulled and quartered
  • 1/3 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg (optional)
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, cold and diced
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine blueberries, raspberries, and quartered strawberries. Add granulated sugar, lemon juice, cornstarch, and vanilla extract. Gently toss to coat the berries evenly.
  3. Transfer the berry mixture to an 8×8-inch baking dish, spreading evenly.
  4. In a medium bowl, mix rolled oats, flour, brown sugar, cinnamon, nutmeg, and salt until combined.
  5. Add cold, diced unsalted butter to the dry ingredients. Use a pastry cutter, forks, or fingers to work the butter into the mixture until it resembles coarse crumbs.
  6. Sprinkle the topping evenly over the berries in the baking dish.
  7. Bake for 35-40 minutes, or until the topping is golden brown and berry juices are bubbling. Tent with foil if topping browns too quickly.
  8. Let the crisp cool for 10-15 minutes to thicken the juices.
  9. Serve warm with a generous scoop of vanilla ice cream.

Notes

Use frozen berries thawed and drained to avoid soggy crisp. Cold butter is essential for a crumbly topping. Cornstarch thickens the berry juices to prevent sogginess. Tent with foil if topping browns too fast. Can prepare ahead by assembling and refrigerating up to 24 hours before baking.
