  • 2 cans (15 ounces each) white beans (cannellini or great northern), drained and rinsed
  • 2 cans (4 ounces each) diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano (Mexican oregano preferred)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 8 ounces cream cheese, softened and cubed
  • ½ cup heavy cream
  • 2 tablespoons fresh lime juice
  • For serving (optional): tortilla chips, shredded Monterey Jack cheese, fresh cilantro, sour cream, diced avocado, sliced jalapeño

Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, drain and rinse the white beans. Cube the cream cheese into 1-inch pieces and let it sit at room temperature.
  2. Layer the ingredients in the slow cooker: Place the chicken breasts in the bottom. Top with diced onion, minced garlic, drained beans, and both cans of green chiles.
  3. Add the seasonings and broth: Sprinkle cumin, oregano, salt, and pepper over everything. Pour in the chicken broth, covering about three-quarters of the chicken.
  4. Cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and shreds easily.
  5. Shred the chicken: Remove the chicken to a cutting board or bowl and shred with two forks. Return shredded chicken to the slow cooker.
  6. Add the cream cheese and heavy cream: Stir in the cubed cream cheese and heavy cream until the cream cheese is completely melted and the chili is smooth and creamy (about 3-5 minutes).
  7. Finish with lime juice: Squeeze in the fresh lime juice and stir. Taste and adjust salt and pepper if needed.
  8. Serve immediately or keep warm on the ‘warm’ setting. Serve with desired toppings.

Notes

For best results, do not add cream cheese at the beginning; add it at the end for a silky texture. If chili is too thick, stir in extra broth. If too thin, mash some beans against the side of the slow cooker or cook uncovered on high for 20 minutes. For a dairy-free version, use full-fat coconut cream instead of cream cheese and heavy cream.
