  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth (low-sodium recommended)
  • 1 cup heavy cream
  • ½ cup cottage cheese, small-curd, blended smooth
  • ¼ cup white wine (optional)
  • 2 tablespoons tomato paste
  • 2 cups fresh spinach, roughly chopped
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, thyme)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat 2 tablespoons olive oil over medium heat in a large pot. Add Italian sausage, breaking it up, and cook until browned and cooked through, about 7-8 minutes. Remove sausage with a slotted spoon and set aside, leaving drippings in pot.
  2. Add chopped onion, carrots, and celery to the pot. Cook over medium heat, stirring occasionally, until softened and translucent, about 5-7 minutes. Add minced garlic and cook 1-2 minutes until fragrant.
  3. Pour in white wine (if using), scraping the bottom of the pot to lift browned bits. Simmer until mostly evaporated, about 2 minutes.
  4. Stir in tomato paste, Italian seasoning, red pepper flakes (if using), salt, and pepper. Cook for 1-2 minutes to toast tomato paste slightly.
  5. Add chicken broth and bring to a gentle boil. Reduce heat and simmer for 10 minutes to meld flavors and soften vegetables.
  6. Add tortellini to simmering soup. Cook fresh tortellini 3-4 minutes or frozen 5-7 minutes, stirring occasionally to prevent sticking.
  7. Blend cottage cheese until smooth using a blender or immersion blender. Stir blended cottage cheese and heavy cream into the soup, mixing well for a silky texture.
  8. Return cooked sausage and chopped spinach to the pot. Stir until spinach wilts and soup is heated through, about 3 minutes. Adjust seasoning with salt and pepper.
  9. Let soup rest off heat for a couple of minutes to thicken slightly. Ladle into bowls and serve warm.

Notes

Do not overcook tortellini to avoid mushy texture. Blend cottage cheese smooth before adding to soup for creamy texture. Adjust seasoning before serving. Add extra broth or cream to adjust soup thickness. Fresh tortellini cooks faster than frozen. For gluten-free, use gluten-free tortellini or pasta.
