A creamy, garlicky Tuscan chicken dish with sun-dried tomatoes and spinach, cooked in one pan for an easy and flavorful dinner.

  • 4 boneless, skinless chicken breasts (about 6 ounces or 170 grams each)
  • 2 tablespoons extra virgin olive oil
  • 4 garlic cloves, finely minced
  • 1/3 cup sun-dried tomatoes packed in oil, chopped
  • 2 cups fresh baby spinach leaves
  • 1 cup heavy cream (full-fat)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat dry chicken breasts and season both sides with salt, pepper, and 1/2 teaspoon dried Italian herbs.
  2. Heat olive oil over medium-high heat in a large skillet. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and tent with foil to keep warm.
  3. Lower heat to medium and add minced garlic to the pan. Stir for 30 seconds until fragrant but not browned.
  4. Add chopped sun-dried tomatoes and fresh spinach. Stir until spinach wilts, about 2-3 minutes.
  5. Pour in heavy cream and sprinkle grated Parmesan cheese. Stir gently until cheese melts and sauce thickens slightly, about 3-4 minutes. Add remaining 1/2 teaspoon dried Italian herbs and red pepper flakes if using. Adjust salt and pepper to taste.
  6. Return chicken breasts to the pan, nestle into the sauce, and simmer together for 2-3 minutes to marry flavors.
  7. Remove from heat and serve hot.

Notes

Do not move chicken too soon when searing to form a golden crust. Avoid burning garlic by stirring briefly over medium heat. If sauce thickens too much, add a splash of chicken broth or water. Fresh parsley can be sprinkled on top before serving for color and freshness. Leftovers reheat well with gentle heat and added broth if needed.
