Crispy Garlic Butter Hasselback Potatoes

Thinly sliced potatoes drenched in garlic butter and fresh herbs, baked to crispy golden perfection with tender interiors. A simple yet impressive side dish perfect for any occasion.

  • 45 medium Yukon Gold or Russet potatoes
  • 1/2 cup (115g) unsalted butter, melted
  • 4 cloves fresh garlic, minced
  • 2 tbsp chopped fresh rosemary
  • 2 tbsp chopped fresh thyme
  • 2 tbsp chopped fresh parsley
  • 1 tsp sea salt, plus more for finishing
  • Freshly ground black pepper, to taste
  • 1 tbsp olive oil (optional, for brushing)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes thoroughly. Using a sharp knife, make thin slices about 1/8 inch (3 mm) apart along each potato, stopping just before cutting all the way through. Use chopsticks or wooden spoons on each side to prevent slicing through.
  3. In a mixing bowl, combine the melted butter, minced garlic, chopped rosemary, thyme, parsley, sea salt, and black pepper. Stir well to meld flavors.
  4. Place the potatoes on a baking sheet and gently brush the garlic butter mixture between each slice and all over the surface. Use a spoon if needed to help the butter seep in.
  5. Bake the potatoes for 40-45 minutes, brushing more garlic butter every 15 minutes if available. The potatoes should be tender inside and crispy on the edges.
  6. Once out of the oven, sprinkle with additional fresh parsley and flaky sea salt. Let the potatoes rest for 5 minutes before serving.

Notes

If garlic butter cools too fast while brushing, warm it slightly again. Separate any slices sticking together with the back of a spoon before baking for even cooking. Tent potatoes with foil if edges brown too quickly. For dairy-free, substitute butter with vegan margarine or olive oil. Can be cooked in an air fryer at 400°F (200°C) for 25-30 minutes.
