A quick and easy sweet potato casserole featuring a crispy pecan streusel topping and a smooth, flavorful sweet potato base, perfect for holidays and potlucks.

  • 3 large sweet potatoes (about 2 pounds / 900g), peeled and cubed
  • 1/3 cup (80ml) pure maple syrup
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 cup (100g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup (60ml) milk (whole or 2%, room temperature) or almond milk for dairy-free
  • For the streusel topping:
  • 3/4 cup (90g) all-purpose flour
  • 1/2 cup (100g) packed brown sugar
  • 1 cup (120g) chopped toasted pecans
  • 6 tablespoons (85g) unsalted butter, cold and cubed
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch casserole dish with butter or cooking spray.
  2. Boil the peeled and cubed sweet potatoes in a large pot of boiling water for 15-20 minutes until fork-tender. Drain thoroughly.
  3. Transfer sweet potatoes to a large mixing bowl. Mash with a hand mixer or potato masher until smooth but still slightly textured.
  4. Add melted butter, maple syrup, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, salt, and milk to the mashed sweet potatoes. Mix gently until just combined.
  5. In a separate bowl, combine flour, brown sugar, chopped toasted pecans, and cinnamon. Add cold cubed butter and use a pastry cutter or fork to blend until coarse crumbs form.
  6. Spread the sweet potato mixture evenly in the prepared baking dish. Sprinkle the streusel topping evenly over the sweet potatoes without pressing down.
  7. Bake for 35-40 minutes until the edges are golden brown and the topping is crunchy. If topping is not crispy enough, broil for 1-2 minutes watching carefully to avoid burning.
  8. Let the casserole cool for about 10 minutes before serving to allow the topping to set.

Notes

Do not overboil sweet potatoes to avoid sogginess. Mash lightly for texture. Toast pecans for extra flavor. Keep butter cold for streusel topping. Broil briefly at the end for extra crispiness. Can be prepared a day ahead and refrigerated before baking. For vegan version, substitute butter with coconut oil and eggs with flax eggs.
