Crispy Simple Grilled Cheese Recipe with Perfect Golden Crust

A quick and easy grilled cheese sandwich with a crispy golden crust and ooey, gooey melted cheese. Perfect for a comforting snack or light meal.

  • 2 slices sturdy white sandwich bread or sourdough
  • 2 to 3 ounces sharp cheddar cheese, shredded
  • 1 ounce mozzarella cheese, shredded
  • 2 tablespoons unsalted butter, softened
  • Optional: pinch of garlic powder or smoked paprika

Instructions

  1. Shred 2-3 ounces sharp cheddar and 1 ounce mozzarella cheese and mix together.
  2. Spread 1 tablespoon softened butter evenly on one side of each bread slice, covering edges well.
  3. Place one slice of bread, butter side down, on a plate. Pile shredded cheese evenly on top, then cover with second slice, butter side up. Press gently to compact.
  4. Preheat skillet over medium-low heat for about 3 minutes.
  5. Place sandwich in skillet and cook for 3-4 minutes until bottom is golden brown and crispy.
  6. Flip sandwich carefully and cook other side for another 3-4 minutes, pressing lightly with spatula.
  7. Check that both sides have a perfect golden crust and cheese is melted and gooey.
  8. Remove sandwich from pan and let rest for 1-2 minutes before cutting.

Notes

Use medium-low heat and be patient to avoid burning the bread. Spread butter evenly edge-to-edge for a perfect golden crust. Freshly shredded cheese melts better than pre-shredded. Let sandwich rest 1-2 minutes before cutting to prevent cheese from spilling out. Cover pan with lid during last minute to help cheese melt if desired.
