A simple, delicious sheet pan dinner with chicken, sweet potatoes, and broccoli that comes together in under 40 minutes. Perfect for busy weeknights when you need a stress-free, crowd-pleasing meal.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts (about 1 pound), cut into 1-inch cubes
  • 2 medium sweet potatoes (about 1 pound), peeled and cut into 1-inch cubes
  • 3 cups broccoli florets (about 8 ounces), cut into bite-sized pieces
  • 3 tablespoons extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a sheet pan with parchment paper if desired.
  2. Cut the chicken breasts into 1-inch cubes. Peel the sweet potatoes and cut them into 1-inch cubes. Cut the broccoli into bite-sized florets.
  3. In a large mixing bowl, combine the chicken, sweet potatoes, and broccoli. Drizzle with 3 tablespoons of olive oil and season generously with salt and black pepper. Toss until everything is evenly coated.
  4. Spread the mixture in a single layer on the prepared sheet pan. Avoid overcrowding.
  5. Roast for 25–30 minutes. After 15 minutes, remove the pan, flip the chicken and vegetables with tongs, then return to the oven for another 10–15 minutes. Chicken should reach an internal temperature of 165°F (74°C) and sweet potatoes should be tender.
  6. For extra browning, broil for the last 2 minutes, watching closely.
  7. Let the pan rest for 5 minutes before serving to allow juices to redistribute.

Notes

Cut sweet potatoes slightly smaller than chicken for even cooking. Don’t skip preheating the oven. Use a meat thermometer to ensure chicken reaches 165°F. Flip halfway through for even browning. Avoid overcrowding the pan to prevent steaming.
