A simple and comforting berry crisp featuring a buttery, crunchy topping and juicy mixed berries. Perfect for beginners and ready in under 45 minutes.

Ingredients

Scale
  • 4 cups (600g) mixed berries (blueberries, raspberries, blackberries, strawberries), fresh or thawed frozen
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon lemon juice
  • 1/4 cup (30g) all-purpose flour
  • 3/4 cup (75g) rolled oats
  • 1/3 cup (70g) brown sugar
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional: 1 teaspoon vanilla extract
  • Optional: small handful chopped toasted almonds or pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine mixed berries, granulated sugar, lemon juice, and all-purpose flour. Stir gently until berries are evenly coated.
  3. Transfer the berry mixture to a greased 8×8 inch (20×20 cm) baking dish and spread evenly.
  4. In a medium bowl, mix rolled oats, brown sugar, ground cinnamon, and salt.
  5. Add cold unsalted butter cubes to the oat mixture and cut in with a pastry cutter or fork until mixture resembles coarse crumbs.
  6. Sprinkle the topping evenly over the berries without pressing down.
  7. Bake for 35-40 minutes until berries are bubbly and topping is golden brown. Tent with foil if topping browns too quickly.
  8. Remove from oven and let cool slightly for 10-15 minutes to thicken juices.
  9. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Keep butter cold when making the topping to ensure a crumbly texture. Avoid stirring the berry filling too much after adding flour to prevent mushy filling. Thaw and drain frozen berries fully to avoid sogginess. Let crisp rest 10-15 minutes after baking for easier serving. Tent with foil if topping browns too fast.
