A comforting and easy breakfast tray recipe perfect for lazy mornings, featuring eggs, bacon, toast, fresh fruit, yogurt, and coffee. Designed to be quick, simple, and adaptable for various dietary needs.

Ingredients

  • Large eggs, preferably free-range or organic
  • Whole wheat or sourdough bread slices
  • Bacon strips or turkey bacon
  • Fresh mixed berries (strawberries, blueberries, raspberries)
  • Banana, sliced
  • Greek yogurt or dairy-free coconut yogurt
  • Maple syrup or honey
  • Butter, unsalted and softened
  • Ground cinnamon (optional)
  • Freshly brewed coffee or your favorite tea
  • Milk or dairy-free alternative (almond, oat, or soy milk)
  • Sugar or sweetener to taste (optional)
  • Optional extras: avocado slices, chopped nuts or granola, fresh herbs like mint or basil

Instructions

  1. Prep your ingredients (5 minutes): Gather all ingredients on the counter. Slice the banana and wash the berries, placing them in small bowls or ramekins.
  2. Cook the bacon (10 minutes): Heat a non-stick skillet over medium heat. Lay the bacon strips flat and cook until crispy, about 4-5 minutes per side. For turkey bacon, cook 3-4 minutes per side. Remove and place on paper towels to drain excess fat.
  3. Toast the bread (3-5 minutes): While the bacon cooks, toast your bread slices to golden perfection. Spread softened butter on the warm toast immediately so it melts in.
  4. Cook the eggs (5 minutes): In the same skillet (wipe excess grease if needed), crack the eggs. You can scramble, fry, or poach them based on preference. For scrambled eggs, whisk eggs with a pinch of salt, cook on low heat, and stir gently until fluffy.
  5. Assemble the tray (5 minutes): Arrange the toast, eggs, and bacon neatly on the tray. Add bowls of berries and yogurt. Drizzle yogurt with honey and sprinkle cinnamon if you like. Place sliced banana on the side or atop the yogurt for a sweet touch.
  6. Prepare the drink (5 minutes): Brew your coffee or tea. Pour into a sturdy mug and add milk or sweetener as desired. Place the mug on the tray, ideally with a small spoon or stirrer.
  7. Final touches (2 minutes): Add a napkin or cloth, a small vase with a fresh flower if you have one, and maybe a small note or book for an extra cozy touch. Carry the tray carefully to your bed and indulge!

Notes

Start by prepping fruit and coffee first, then cook bacon and eggs together to save time. Use low heat when scrambling eggs to avoid rubberiness. Butter toast immediately after toasting to keep it warm and crunchy. Freshly ground coffee beans improve flavor but pre-ground works in a pinch. For gluten-free, use gluten-free bread; for vegan, replace eggs with scrambled tofu and use plant-based butter and yogurt.
