  • 8 slices thick-cut bacon, cooked until crispy
  • 1 cup cherry tomatoes, halved
  • 2 cups romaine lettuce, chopped, washed and dried
  • 1/4 cup red onion, finely diced (optional)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • Black pepper, freshly ground, to taste
  • Salt, to taste
  • 2 tablespoons fresh chives or parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 ounces (340 g) of rotini or penne and cook according to package instructions until al dente, about 9-11 minutes. Drain and rinse under cold water to stop cooking. Set aside to cool slightly.
  2. Heat a large skillet over medium heat. Lay 8 thick-cut bacon slices flat. Cook until crispy, about 5-7 minutes per side depending on thickness. Remove to a paper towel-lined plate to drain excess fat. Once cooled, crumble into bite-sized pieces.
  3. In a medium bowl, whisk together 1/2 cup mayonnaise, 1/4 cup sour cream, 1 tablespoon apple cider vinegar, 1/2 teaspoon garlic powder, salt, and pepper to taste. Adjust seasoning as needed.
  4. Halve 1 cup cherry tomatoes, chop 2 cups romaine lettuce, and finely dice 1/4 cup red onion (if using). Chop fresh herbs like chives or parsley for garnish.
  5. In a large mixing bowl, add the warm pasta, crumbled bacon, chopped veggies, and dressing. Toss gently but thoroughly to coat everything evenly.
  6. Sprinkle chopped chives or parsley on top for a fresh pop of color. Taste and add extra salt or pepper if needed.

Notes

Cook bacon carefully to avoid burning; thick-cut bacon is preferred for crunch. Rinse pasta under cold water to prevent sticking. Toss salad just before serving to keep bacon crispy. For make-ahead, keep bacon separate and add last. Substitute sour cream with Greek yogurt or vegan alternatives for dairy-free options. Use gluten-free pasta if needed.
