This Easy Crockpot Honey Garlic Chicken Thighs recipe is a weeknight hero with just 5 minutes of prep. The sticky, sweet, and savory sauce coats tender chicken thighs for a crowd-pleasing dinner that tastes like you spent hours in the kitchen.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs
  • 1/3 cup honey
  • 1/3 cup low-sodium soy sauce
  • 45 cloves garlic, minced
  • 1 tablespoon cornstarch (for slurry)
  • 2 tablespoons cold water (for slurry)
  • 1 teaspoon toasted sesame oil (optional)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon freshly grated ginger (optional)

Instructions

  1. Pat chicken thighs dry with paper towels. (Optional: sear in a skillet with oil for 2-3 minutes per side until golden brown.)
  2. In a small bowl, whisk together honey, soy sauce, and minced garlic. Add ginger if using.
  3. Place chicken thighs in the slow cooker in a single layer. Pour the honey garlic sauce over the top.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours.
  5. About 15 minutes before serving, remove chicken to a plate. In a small bowl, whisk cornstarch and cold water to make a slurry.
  6. Turn slow cooker to HIGH. Pour slurry into the hot sauce and whisk constantly for 2-3 minutes until thickened and glossy.
  7. Return chicken to the slow cooker and spoon sauce over. Stir in sesame oil if using. Garnish with green onions and sesame seeds. Serve over rice or with vegetables.

Notes

For best texture, use chicken thighs instead of breasts. The cornstarch slurry is essential for a thick, glossy sauce. Searing the chicken adds extra flavor but is optional. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months.
