Instructions

  1. Prep the Veggies (10-12 minutes): Wash all vegetables thoroughly under cold water and pat dry. Peel carrots and slice into sticks about 3 inches long. Cut celery into similar lengths. Slice cucumbers into ¼-inch rounds or sticks. Remove seeds and ribs from bell peppers, then cut into strips. Halve cherry tomatoes if large.
  2. Mix the Creamy Ranch Dip (5 minutes): In a medium bowl, combine sour cream and mayonnaise. Add ranch seasoning mix and fresh lemon juice. Whisk until smooth. Stir in chopped fresh chives if using. Season with salt and pepper to taste. Add a teaspoon of water or milk if dip is too thick.
  3. Arrange the Veggie Tray (3-5 minutes): On a large serving platter, group veggies by type in small clusters or rows for a colorful presentation. Place the creamy ranch dip in a bowl at the center or to one side. Garnish dip with chopped chives or paprika.
  4. Final Touches: Chill the tray in the fridge for 10 minutes if time allows to firm up the dip and keep veggies crisp. Serve immediately or cover with plastic wrap until ready.
