  • 1 cup long-grain white rice
  • 2 cups water or low-sodium chicken broth

  • 1 teaspoon lime zest
  • 1 tablespoon lime juice
  • Salt to taste
  • 1 cup black beans, drained and rinsed (optional)
  • 1 fresh avocado, sliced or guacamole (optional)

  • ½ cup shredded cheddar or Monterey Jack cheese (optional)

Instructions

  1. In a bowl, whisk together olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, black pepper, lime juice, and honey. Add chicken breasts and toss to coat evenly. Cover and refrigerate for at least 15 minutes, or up to 2 hours for deeper flavor.
  2. Rinse 1 cup of long-grain rice under cold water until water runs clear. In a medium saucepan, combine rinsed rice with 2 cups water or broth and a pinch of salt. Bring to a boil over high heat, then reduce to low, cover, and simmer for 15 minutes without lifting the lid. Remove from heat and let it rest for 5 minutes.
  3. Fluff rice with a fork, then stir in chopped cilantro, lime zest, and lime juice. Adjust salt to taste. Set aside or keep covered.
  4. Heat a large skillet over medium-high heat. Once hot, add marinated chicken breasts. Cook for about 5-7 minutes on each side, or until internal temperature reaches 165°F (74°C) and the chicken has a nice golden crust. Avoid moving the chicken too much to get that sear. If chicken is thick, slice it in half horizontally for faster cooking.
  5. Remove chicken from skillet and let rest for 5 minutes to keep juices locked in. Then slice into strips or bite-sized pieces.
  6. In the same skillet, briefly warm black beans for 2-3 minutes just until heated through (optional).
  7. In meal prep containers or bowls, layer cilantro-lime rice, black beans, sliced chicken, and preferred toppings like avocado, cherry tomatoes, cheese, and a dollop of Greek yogurt or sour cream.

Marinate chicken for at least 15 minutes for best flavor; longer marinating up to 2 hours is better. Use a meat thermometer to ensure chicken reaches 165°F. Rest chicken after cooking to keep it juicy. Avoid overcrowding the pan to get a good sear. Fluff rice gently with a fork to keep it light and separate. For extra char, finish chicken under the broiler for 1-2 minutes. When reheating, add a splash of water or broth to keep rice moist.
