  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper, freshly ground
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 tablespoon olive oil or unsalted butter

Instructions

  1. Finely chop one medium yellow onion and mince two garlic cloves.
  2. Heat 1 tablespoon olive oil or butter in a skillet over medium heat. Add chopped onions and cook until soft and translucent, about 5 minutes.
  3. Add garlic and cook for another 1-2 minutes until fragrant but not browned.
  4. Stir in tomato paste, smoked paprika, black pepper, and cayenne pepper (if using). Cook for about 2 minutes to caramelize the tomato paste.
  5. Pour in the two cans of baked beans (including the sauce), then add brown sugar, Dijon mustard, and apple cider vinegar. Stir gently to combine.
  6. Lower heat to medium-low and simmer uncovered for 10-12 minutes, stirring occasionally until sauce thickens and becomes glossy.
  7. Optional: Transfer beans to an oven-safe dish or keep in skillet if ovenproof. Bake at 350°F (175°C) for 15 minutes to caramelize the top.
