Ingredients

Scale
  • Boneless, skinless chicken thighs or breasts (1.5 to 2 lbs)
  • Ground beef or turkey (1 lb)
  • Beans (canned or dried) – black beans, kidney beans, or chickpeas
  • Firm tofu (14 oz), pressed and cubed
  • Onions (1 medium), diced
  • Garlic cloves (3-4), minced
  • Bell peppers (1-2), chopped
  • Carrots (2-3), sliced
  • Potatoes (2 medium), cubed (Yukon Gold or red potatoes)
  • Frozen corn or peas (1 cup)
  • Chicken or vegetable broth (1.5 to 2 cups)
  • Canned diced tomatoes (14 oz)
  • Soy sauce or tamari (2-3 tbsp)
  • Coconut milk (1 cup)
  • Tomato paste (2 tbsp)
  • Dried oregano (1 tsp)
  • Dried thyme (1 tsp)
  • Ground cumin (1 tsp)
  • Paprika (1 tsp)
  • Salt and freshly ground black pepper to taste
  • Red pepper flakes (optional)
  • Parmesan cheese (grated, optional)
  • Fresh herbs like parsley or cilantro (optional)
  • Juice of half a lemon or lime (optional)

Instructions

  1. Prep your ingredients by dicing onions, mincing garlic, chopping vegetables, and measuring spices and liquids (5-10 minutes).
  2. Optional: Using the Instant Pot’s sauté function or a skillet, brown your protein and soften onions and garlic (7-10 minutes).
  3. Dump ingredients into the Instant Pot in layers: place denser ingredients like potatoes or carrots at the bottom with liquid, then top with meat and softer veggies. Avoid stirring vigorously.
  4. Seal the lid and set the valve to sealing. Choose pressure cook/manual function and set cooking time between 15 and 30 minutes depending on the recipe.
  5. Allow natural pressure release for 10-15 minutes for best texture. Quick release can be used if in a rush but may affect tenderness.
  6. Carefully unlock and open the lid. Stir gently, taste for seasoning, and adjust salt, pepper, or acidity with lemon juice if needed.
  7. Serve immediately garnished with fresh herbs or cheese. Use the Instant Pot’s keep warm function to hold the meal for up to an hour without drying out.

Notes

Do not overfill the Instant Pot; leave at least one-third free for pressure build-up. Layer ingredients wisely to avoid burn warnings. Fresh garlic and herbs brighten flavors better than dried. Optional browning of meat adds depth but can be skipped. Adjust liquid amounts carefully to prevent burn errors. Add delicate herbs after cooking to preserve freshness. If burn warning appears, stir gently and add more broth before continuing.
