  • Freshly ground black pepper, to taste
  • 12 tablespoons olive oil or avocado oil
  • Optional: garlic powder or smoked paprika for flavor boost
  • Optional marinade: Worcestershire sauce, garlic, and herbs

Instructions

  1. Bring the steak to room temperature for 15-20 minutes.
  2. Preheat the grill on high for 10-15 minutes until smoking hot.
  3. Pat the steak dry with paper towels.
  4. Brush both sides lightly with olive oil.
  5. Season generously with kosher salt and freshly ground black pepper.
  6. Optionally sprinkle garlic powder or smoked paprika.
  7. Place the steak directly over the hottest part of the grill.
  8. Grill for about 4-5 minutes per side for medium-rare (1-inch thick steak).
  9. Check doneness with a meat thermometer: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
  10. Transfer steak to a plate and tent loosely with foil.
  11. Rest for 5-10 minutes to allow juices to redistribute.
  12. Slice against the grain and serve immediately.

Notes

Let the steak rest after grilling to redistribute juices. Use high heat for a good sear and avoid flipping too often. Pat steak dry before seasoning.
