  • 1/2 cup natural creamy peanut butter (125g)
  • 1/3 cup honey or maple syrup (80ml)
  • 1/3 cup mini semi-sweet chocolate chips (60g)
  • 2 tablespoons ground flaxseed (14g)
  • 1 teaspoon vanilla extract (5ml)
  • Pinch of sea salt
  • 1 tablespoon chia seeds (optional, 12g)

Instructions

  1. Gather all your ingredients.
  2. Combine rolled oats, ground flaxseed, sea salt, and chia seeds (if using) in a mixing bowl.
  3. Add peanut butter, honey (or maple syrup), and vanilla extract. Mix thoroughly until a sticky, cohesive dough forms. Adjust with more honey or peanut butter if too dry, or more oats if too wet.
  4. Fold in the mini chocolate chips gently to avoid melting or breaking them.
  5. Portion out the mixture into 1-inch balls using your hands or a small scoop. Roll gently between palms until smooth. If mixture sticks, dampen hands slightly with water.
  6. Place the balls on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to set.
  7. Transfer chilled energy balls to an airtight container. Store in the refrigerator for up to one week or freeze for up to three months.

If peanut butter is too stiff, warm slightly in microwave for 10 seconds to ease mixing. Chill energy balls for at least 30 minutes to firm up and improve texture.
