  • 1/2 cup natural peanut butter (smooth or crunchy)
  • 1 1/2 cups rolled oats (use gluten-free if needed)
  • 1 tablespoon chia seeds
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of salt
  • Optional mix-ins: mini dark chocolate chips or chopped dark chocolate, chopped nuts (walnuts or pecans), dried fruit (raisins or cranberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Mash the bananas in a large mixing bowl using a fork or potato masher until mostly smooth with some small lumps remaining.
  3. Add peanut butter and vanilla extract to the mashed bananas. Stir well until fully combined.
  4. In a separate small bowl, mix the oats, chia seeds, baking powder, cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet banana and peanut butter mixture, mixing gently with a spatula or spoon until just combined.
  6. Add any optional mix-ins like chocolate chips, nuts, or dried fruit, folding them in carefully.
  7. Drop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie gently with the back of the spoon or your fingers to about 1/2 inch thick.
  8. Bake in the preheated oven for 12 to 15 minutes until edges are lightly golden and centers are set.
  9. Cool the cookies on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

If cookies are too crumbly, add a tablespoon of unsweetened applesauce next time. Watch oven temperature carefully as ovens vary; check cookies a minute or two early to avoid overbaking. For nut-free version, substitute peanut butter with sunflower seed butter. Dough can be prepared the night before and baked fresh in the morning.
