  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 medium ripe bananas, mashed (about 1 cup)
  • ⅓ cup (65g) granulated sugar
  • ⅓ cup (75g) unsalted butter, melted and cooled
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (150g) fresh or frozen blueberries (toss frozen blueberries in a tablespoon of flour to prevent sinking)
  • Optional: A sprinkle of cinnamon or nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
  2. In a large mixing bowl, mash the ripe bananas with a fork or potato masher until mostly smooth but still a bit chunky (about 1-2 minutes).
  3. Add the sugar, melted butter, egg, and vanilla extract to the mashed bananas. Stir gently to combine until creamy and uniform (about 1 minute).
  4. In a separate smaller bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet banana mixture, folding gently with a spatula until just combined (about 1-2 minutes). Do not overmix; the batter should be a little lumpy.
  6. Toss the blueberries in a tablespoon of flour and gently fold them into the batter, being careful not to break the berries.
  7. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The tops should be golden and slightly springy to the touch.
  9. Remove from the oven and let cool in the pan for 5 minutes, then transfer the muffins to a wire rack to cool completely.

Notes

Do not overmix the batter to keep muffins tender. Use ripe bananas with brown spots for natural sweetness. Toss frozen blueberries in flour before adding to prevent sinking. Let muffins cool completely before storing to avoid sogginess. If muffins brown too quickly, tent with foil halfway through baking.
