A cozy and comforting cinnamon roll casserole that soaks overnight in a rich custard, perfect for an easy and delicious breakfast or brunch.

Ingredients

Scale
  • 8 large premade cinnamon rolls with icing (recommend Pillsbury)
  • 4 large eggs, room temperature
  • 1 cup (240 ml) whole milk (can substitute almond or oat milk for dairy-free)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter, melted
  • Optional: chopped pecans or walnuts
  • Optional: fresh or frozen berries (blueberries, raspberries)
  • Optional: maple syrup or extra icing drizzle for serving

Instructions

  1. Lightly grease a 9×13-inch casserole dish with butter or non-stick spray to prevent sticking and help edges brown. (5 minutes)
  2. Unroll or slice the premade cinnamon rolls into halves or quarters depending on size. Place evenly in the casserole dish, packing snugly but not too tight. (5 minutes)
  3. In a medium bowl, whisk together 4 large eggs, 1 cup whole milk, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 2 tablespoons granulated sugar, and 2 tablespoons melted butter until smooth and slightly frothy. (5 minutes)
  4. Slowly pour the custard evenly over the cinnamon roll pieces, pressing down any floating pieces to ensure full coverage. (2 minutes)
  5. Cover the casserole tightly with plastic wrap or foil and refrigerate for at least 8 hours or overnight to soak. (Overnight)
  6. Preheat oven to 350°F (175°C). Remove casserole from fridge and let sit at room temperature for 10 minutes. Bake uncovered for 35-40 minutes until top is golden brown and custard is set. Cover loosely with foil if top browns too quickly. (35-40 minutes)
  7. Remove from oven and let cool for 10 minutes. Drizzle with included cinnamon roll icing or a simple glaze before serving. (10 minutes)

Notes

Do not skip the overnight soak for best custardy texture. Use room temperature eggs to avoid curdling. Press cinnamon roll pieces gently into custard for even soaking. Tent with foil if top browns too quickly. Save icing packets for drizzling after baking. Can substitute dairy-free milk and butter for dairy-free version. Add nuts or berries for variation.
