  • 6 cups cubed day-old French bread or brioche
  • 8 large eggs, room temperature
  • 2 cups whole milk or half-and-half
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced bell peppers (red or green)
  • 1/2 cup finely chopped green onions
  • 1 cup cooked breakfast sausage or bacon bits (optional)
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Cube about 6 cups of day-old French bread or brioche into roughly 1-inch pieces. If bread is fresh, toast lightly for 5 minutes at 350°F.
  2. Cook 1 cup of breakfast sausage or bacon bits in a skillet over medium heat until browned and crisp. Drain excess fat and set aside. (Skip or substitute for vegetarian option.)
  3. In a large bowl, whisk together 8 large eggs, 2 cups whole milk or half-and-half, 1 teaspoon Dijon mustard, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth and slightly frothy.
  4. In a medium bowl, toss the bread cubes with cooked sausage, 1 cup diced bell peppers, and 1/2 cup chopped green onions. Spread evenly in a greased 9×13 inch baking dish.
  5. Slowly pour the egg mixture over the bread and toppings, pressing gently to help the bread absorb the custard. Let sit for 10-15 minutes at room temperature or cover and refrigerate overnight.
  6. Sprinkle 1 cup shredded sharp cheddar cheese evenly over the top and drizzle with 2 tablespoons melted butter.
  7. Preheat oven to 350°F. Bake uncovered for 45-55 minutes until the top is golden and a knife inserted in the center comes out clean.
  8. Let the casserole rest for 5-10 minutes before serving.

Notes

Use day-old bread for best texture. Room temperature eggs mix more evenly. Let casserole rest after baking for easier slicing. If casserole is too wet after baking, bake an additional 5-10 minutes. Vegetarian and gluten-free substitutions are easy. Butter the baking dish well to prevent sticking.
