  • 1 cup (125 g) all-purpose flour
  • 1 cup (200 g) granulated sugar
  • 1 cup (240 ml) milk (whole milk preferred, 2% or plant-based works too)
  • 1/2 cup (115 g) unsalted butter, melted
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • Optional: 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Drain the peaches slightly, reserving about 1/4 cup (60 ml) of the juice. Pour the peaches along with that juice into your prepared baking dish, spreading them in an even layer.
  3. In a mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon until well combined.
  4. Slowly pour in milk and melted butter (plus vanilla extract if using) into the dry mix, stirring gently until just combined. The batter will be somewhat thin.
  5. Pour the batter evenly over the peaches in the baking dish without stirring.
  6. Bake uncovered for 40-45 minutes, or until the crust is golden brown and a toothpick inserted near the center comes out clean.
  7. Cool slightly for about 10 minutes before serving.

Notes

Use room temperature ingredients for best results. Do not overmix the batter to avoid a rubbery texture. Drain canned peaches well to prevent sogginess. Tent with foil if crust browns too quickly. Let cobbler cool slightly before serving to set.
