Easy Protein-Packed Peanut Butter Energy Bites

Quick and easy peanut butter energy bites packed with protein and fiber, perfect for a fast energy boost or a healthy snack on the go.

Ingredients

  • 1 cup (240g) creamy peanut butter (natural, unsweetened preferred)
  • 1 1/2 cups (135g) rolled oats
  • 1/4 cup (60ml) honey or maple syrup
  • 1 tablespoon chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup (30g) mini chocolate chips or ground flaxseed (optional)

Instructions

  1. Combine peanut butter, rolled oats, honey or maple syrup, chia seeds (if using), vanilla extract, salt, and mini chocolate chips or flaxseed (if using) in a mixing bowl.
  2. Mix thoroughly with a spoon or spatula until fully combined and sticky but manageable. Adjust texture by adding a teaspoon of water or more honey if too dry, or more oats if too wet.
  3. Scoop out the mixture using a tablespoon and roll into tight balls, yielding about 15-18 bites depending on size.
  4. Place the bites on a lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
  5. Serve immediately after chilling or store in an airtight container in the refrigerator for up to one week.

Notes

Do not skip the chilling step to avoid crumbly bites. Stir oily peanut butter before measuring to prevent oily bites. Use rolled oats for best texture. Store in airtight container in fridge up to 7 days or freeze up to 3 months.
