A simple and quick recipe for crisp, tangy dill refrigerator pickles that require no canning and use everyday pantry staples.

  • 45 medium pickling cucumbers, sliced into spears or rounds
  • 34 sprigs fresh dill, including stems
  • 3 garlic cloves, peeled and lightly smashed
  • 1 cup (240 ml) white vinegar (distilled or white wine vinegar)
  • 1 cup (240 ml) water
  • 1 tablespoon kosher salt or pickling salt
  • 1 teaspoon granulated sugar (optional)
  • 1 teaspoon pickling spices (optional; mustard seeds and peppercorns recommended)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the brine: In a small saucepan, combine 1 cup white vinegar, 1 cup water, 1 tablespoon kosher salt, and 1 teaspoon sugar. Warm over medium heat, stirring until salt and sugar dissolve. Remove from heat and let cool slightly (about 10 minutes).
  2. Slice the cucumbers: Wash cucumbers thoroughly. Slice into spears about 3 inches long or into 1/4-inch thick rounds, depending on preference.
  3. Pack the jar: Place 3–4 fresh dill sprigs and 3 smashed garlic cloves at the bottom of a clean quart-sized jar. Add the sliced cucumbers tightly packed but not crushed. If using, sprinkle pickling spices and red pepper flakes between layers.
  4. Pour the brine: Carefully pour the warm brine over the cucumbers, ensuring they are fully submerged. Leave a little headspace at the top.
  5. Seal the jar with a tight-fitting lid and refrigerate.
  6. Let pickles sit in the refrigerator for at least 24 hours before eating for best flavor and crunch.

Notes

Use kosher or pickling salt to avoid cloudy brine; do not use iodized table salt. For a low-sodium version, reduce salt but expect less crunch and preservation time. Fresh dill can be substituted with dill seeds in summer. Glass jars preserve flavor best. Warm brine helps dissolve salt and sugar faster but let it cool before pouring over cucumbers.
