  • 2 1/2 cups (350g) mixed berries (blueberries, raspberries, blackberries, strawberries), fresh or frozen
  • 1/3 cup (65g) granulated sugar
  • 1 tbsp cornstarch
  • Zest of 1 lemon
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract (optional)
  • 1 egg, beaten (for brushing the crust)
  • 1 tbsp coarse sugar or turbinado sugar (for sprinkling on top)
  • Honey or maple syrup, for drizzling (optional)

Instructions

  1. Make the crust: In a large bowl, whisk together flour, salt, and sugar. Add cold, cubed butter and cut into the flour until mixture resembles coarse crumbs with some pea-sized pieces. Slowly add ice water, one tablespoon at a time, mixing just until dough holds together. Avoid overworking.
  2. Chill the dough: Shape dough into a disc, wrap in plastic wrap, and chill in fridge for at least 30 minutes.
  3. Prepare the filling: In a medium bowl, combine mixed berries, sugar, cornstarch, lemon zest, lemon juice, and vanilla extract (if using). Toss gently to coat.
  4. Roll out the dough: On a lightly floured surface, roll chilled dough into a rough 12-inch circle about 1/8-inch thick. Transfer to a parchment-lined baking sheet.
  5. Assemble the galette: Spoon berry filling onto center of dough, leaving a 2-inch border. Fold edges over berries, pleating as needed. Brush crust with beaten egg and sprinkle with coarse sugar.
  6. Bake: Preheat oven to 400°F (200°C). Bake galette for 35-40 minutes until crust is golden and filling bubbles. Tent with foil if crust browns too fast.
  7. Cool and serve: Let galette cool at least 15 minutes before slicing. Serve warm or at room temperature, optionally drizzled with honey or maple syrup.
