Easy Sheet Pan Honey Mustard Salmon Recipe with Roasted Vegetables

A quick and easy sheet pan dinner featuring honey mustard glazed salmon and roasted vegetables, perfect for busy weeknights and minimal cleanup.

  • 4 salmon fillets, 6 ounces each, skin-on
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • 8 ounces baby carrots
  • 12 ounces baby potatoes, halved
  • 8 ounces asparagus spears, trimmed
  • Optional: cherry tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a mixing bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, fresh lemon juice, salt, and pepper until smooth.
  3. Toss baby carrots, halved baby potatoes, and asparagus spears with a little olive oil, salt, and pepper. Spread them evenly on one side of the sheet pan in a single layer.
  4. Pat salmon fillets dry with paper towels. Place them skin-side down on the other side of the sheet pan.
  5. Brush each salmon fillet generously with the honey mustard glaze, reserving some for basting later.
  6. Roast in the oven for 15-18 minutes until veggies are tender and caramelized and salmon flakes easily with a fork.
  7. Optional: Broil for the last 2 minutes for extra caramelization, watching carefully to avoid burning.
  8. Remove from oven and let salmon rest for a couple of minutes before serving.

Notes

Pat salmon dry before glazing for a crispy crust. Avoid overcrowding the pan to prevent soggy vegetables. Let salmon rest after cooking to redistribute juices. Use room temperature salmon for even cooking. Optional broil step adds caramelization but watch carefully to avoid burning.
