A quick and easy recipe for refreshing popsicles made with just two ingredients: fruit juice and a complementary liquid like coconut water. Perfect for a cool summer treat with minimal fuss.

  • 2 cups (480 ml) fruit juice (e.g., orange juice, grape juice, cranberry juice)
  • 1 cup (240 ml) complementary liquid (coconut water, sparkling water, or filtered water)
  • Optional: 1 tablespoon freshly squeezed lemon or lime juice

Instructions

  1. In a medium bowl, combine 2 cups (480 ml) of your chosen fruit juice with 1 cup (240 ml) of complementary liquid. Stir gently until blended, about 2 minutes.
  2. If desired, add 1 tablespoon of fresh lemon or lime juice and mix.
  3. Carefully fill your popsicle molds, leaving about 1/4 inch (0.5 cm) gap at the top for expansion.
  4. Insert popsicle sticks into the molds, ensuring they stand straight and centered.
  5. Freeze the molds for at least 6 hours or overnight for best results. Smaller molds may freeze in about 4 hours.
  6. To remove, run warm water briefly over the outside of the mold for 10-20 seconds and gently pull on the sticks.

Notes

Avoid overfilling molds to prevent spills and cracking. Use juices with moderate sugar content and balance with coconut or sparkling water to prevent rock-hard popsicles. Run warm water on molds to release popsicles easily. Wooden sticks should be soaked in water for 10 minutes before use to prevent splintering.
