This creamy, spicy Buffalo chicken dip is made in the slow cooker with simple ingredients like shredded chicken, cream cheese, hot sauce, and ranch dressing. Perfect for game days, it’s a crowd-pleaser that requires minimal effort.

Ingredients

Scale
  • 3 cups cooked chicken, shredded
  • 16 ounces cream cheese, softened
  • 1 cup Buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, sliced (for garnish)
  • 1 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)
  • 1 pinch smoked paprika (optional)
  • 1 tablespoon butter (optional, for extra richness)

Instructions

  1. Prepare your ingredients: shred chicken, soften cream cheese (leave at room temperature for 30 minutes or microwave in 15-second bursts), shred cheeses if using blocks, and slice green onions.
  2. In a large mixing bowl, combine softened cream cheese, sour cream, and ranch dressing. Stir until smooth.
  3. Add Buffalo hot sauce and stir. Add shredded chicken and mix until well coated. Taste and adjust heat if desired.
  4. Fold in shredded cheddar and mozzarella, reserving about 1/4 cup of cheddar for topping. Stir until evenly distributed.
  5. Spray the inside of a 4-6 quart slow cooker with nonstick spray or rub with butter. Transfer the mixture to the slow cooker and spread into an even layer. Sprinkle reserved cheddar on top.
  6. Cover and cook on low for 2 to 3 hours. Do not cook on high. After 90 minutes, gently stir.
  7. The dip is ready when hot, bubbly around edges, and top is lightly golden. For a browner top, switch to warm and let sit uncovered for 15 minutes.
  8. Garnish with sliced green onions. Serve directly from the slow cooker on warm setting with sturdy chips, celery sticks, carrot sticks, or toasted baguette slices.

Notes

If dip looks thin after cooking, stir and let sit on warm uncovered for 10 minutes to thicken. If too thick, stir in a splash of milk or chicken broth. For a browner top, switch to warm and leave uncovered for 15 minutes.
